I recently got an old webcam to use for my simracing setup, but when I try to launch AiTrack the preview is bugged. I previously used an app on iPhone called HeadTracking (https://apps.apple.com/us/app/smart-head-track-for-opentrack/id1531547793) and it worked fine. Please help !

This sort of row/stride rolling issues are usually because of mismatched resolution.
The resolution your camera is running on is not the same as the one you selected in the configuration menu. Setting them to the same value will probably fix it.
