Make LEDs and screen Optional

I would like to use this to make my own keyboard, but I have no need for LEDs or a screen adn it seems these are backed into the code as it will not run without them. I am already working on removing these elements, and I may end up uploading my own code, but it would be nice to have simple flags in your code to mark whether you have the screen or LEDs installed, like is there for the left/right handed mode.

@electricWah - did you end up finishing this? I have the same problem and would prefer to steal from you rather than do it myself.

Alternatively @CrazyRobMiles - is this something you would be willing to implement? Keen to make this.

I've had a look at the code and making the leds and text display optional is not trivial as it impacts on the teaching and game parts of the code. I think your best bet might be to go through the code and rip out everything that you don't need and build a stripped-down version. I'm sorry, but I'm a bit too busy at the moment to do this myself.
