---+ Beef and Broccoli

Ingredientes:

  • 500 gr. Beef (flank stake or whatever), cut agaist the grain in byte-size strip pieces
  • 4 cloves Garlic, finely chopped
  • 2 tsp. fresh Ginger, grated
  • 2 Green onions, chopped separately white and green parts
  • 250 gr. Broccoli, cut in byte-size pieces
  • 40 gr. Carrot, cut in slices
  • Asparagus (optional)
  • 4 Tbsp. Oil
  • 1 tsp. Sesame oil or sesame seeds
  • Cooked rice

Aaron's Meat Velveting:

  • 1 Tbsp. Soy Sauce
  • 1 Tbsp. Xiaoxing wine
  • 1/4 tsp. White pepper
  • 1 Tbsp. Corn starch
  • 1/2 tsp. Baking soda
  • 1 Tbsp. Cooking Oil

Chef Jean Pierre's Velveting:

  • 1 Tbsp. Soy Sauce
  • 1 tsp. Apple cider / Sherry vinegar
  • 1/2 tsp. Worcestershire sauce
  • 1 Tbsp. Corn starch
  • 1/2 tsp. Baking soda
  • 1 egg

Aaron's Sauce:

  • 1 Tbsp. Soy sauce
  • 2 Tbsp. Oyster sauce
  • 1/2 tsp. Dark soy sauce
  • 1 Tbsp. Sugar
  • 1 Tbsp. Xiaoxing wine
  • 1 tsp. Chicken boullin powder
  • 5 Tbsp. Water
  • 1 Tbsp. Corn starch
  • 1 pinch of MSG (optional)

Chef Jean Pierre's Sauce:

  • 1 Tbsp. Soy Sauce
  • 1 tsp. Umami tamari splash with red miso
  • 2 Tbsp. Oyster sauce
  • 1/4 tsp. Worcestershire sauce
  • 1 Tbsp. Corn starch
  • 1 Tbsp. Sesame oil

Tools:

  • Wok

Preparation:

  1. Cut the beef; mix all the velveting ingredients and add them to a bowl with the beef; mix well and refrigerate for at least 30 minutes.
  2. Blanch the broccoli for a couple minutes in boiling water with salt, then transfer to iced water. Make the sauce by mixing all ingredients.
  3. In a hot wok, add a tablespoon of cooking oil and sear the beef for 1 or 2 minutes. Don't overcrowd the surface. Once done in one side, flip and do the other. Repeat until finish searing the meat.
  4. Add oil to the same wok, put the white parts of the onions, garlic and ginger in and saute for one minute. Then, add the meat and the sauce, mix from time to time until the sauce thickens. Add all the vegetables (broccoli, carrot and asparagus) and saute. Finally, add the green onions and a bit of sesame oil.
  5. Serve with rice.
