Are there any recommended hardware for using as a dongle like Chromecast?
For example, a standalone product, or a combination of like a Raspberry PI with a special case and cable, etc.

Regards.

There's no specific recommended hardware at this point, no. I had originally targeted Raspberry Pi systems but video hardware acceleration is rather complicated there. You can see a number of platfoms tested on in the NymphCast Readme file.

For lightweight systems that can handle the video decoding (including AV1 video), I have found the Intel N100 to be rather practical. I'm using that as an HTPC test platform (running Manjaro Linux). The Mini PCs featuring the N100 come as a complete system, so that's maybe worth a look.

Another thing that I'm currently testing is Android TV (LineageOS) on the Raspberry Pi (4). Using NymphCast on any Android-powered smart TV would then also work, naturally.

For audio-only there are a lot of options. I'm currently working on a Raspberry Pi-based reference system that uses Alpine Linux (for read-only SD card access), but just about any SBC should work.
