Create a document to explain how to build an environment to run the current version of the ISO simulator. The intention is to freeze this version of the code, tag it and reference it on Zenodo.

Hi James, I believe we already this sort of document here: https://github.com/NCAS-VISION/VISION-toolkit/tree/main/ISO_simulator, though it needs to be updated so that we show how to get a working CIS environment, as you have discovered I understand.
