When a user edits the config.json file, it may result in a different encoding being used, thus leading to an error when parsing the json file.

Windows Notepad saves the json file in 'utf-8-sig' which causes an error. Solution: https://stackoverflow.com/a/56485900
Mac's default text editor has not yet been tested.

This would be solved automatically by #19, however it would still be good as a temporary fix.
