To implement the chatbot for the food delivery platform, I'll first develop a user-friendly frontend using React.js for seamless customer interactions, including order tracking, payment queries, and special offers. The backend will be built with Node.js, Express, and MongoDB to manage orders and user data.

That sounds interesting. However this is a PHP project and integrating a chatbot that requires a node server won't be a viable approach.
This would be a great addition but it will require us to either maintain 2 servers with 2 databases or move the entire project to MERN stack. I don't think it would be possible. Please let me know your views on it.

I will be working on the development of the chatbot for the food delivery platform. However, I would like to mention that integrating the chatbot into your PHP project is beyond my current expertise, as I am not very familiar with PHP.
