Currently only previously trained plastic types can be detected by the machine learning algorithm. This way the reremeter is not practically useful and should not be built for the purpose of detecting plastic.
It is still a good project for spectroscopy, signal processing and machine learning labs.

Is it possible to rewire this architecture to be used with a Raspberry Pi?

You might want to check out https://github.com/Jerzeek/PlasticScanner.
He did this work already.
