Support for OpenAPI Vendor Extensions

Hi there,

Thank you for all the work on this project. I has been working great so far. I am looking to see if vendor extensions is something that is supported/can be made to work and/or if it is something that can be added at some point in the roadmap.

Great question, I was meaning to open an issue for this :)

Tbh I have not been spending a ton of time up keeping this repo recently, so, if you want to take a stab at implementing this, definitely give it a go.

If I have some free time I'll poke around with it, would be a nice feature to support for 4.0 release

unfortunately, kotlinx serialization does not make serializing arbitrary data very easy... i don't think there is a path for me to do this in V4, without holding up all of the other features while I play with ideas.

So, I'm going to bump this from the V4 release and hopefully come up with a good solution later on.

I don't spend much time on this project any more, I'd be surprised if this feature gets implemented unless someone wants to take on the very large lift of figuring out how to do this.
