ui: remove enzyme from bibliography generator

Enzyme is dead and it needs to go

Work involved

• Remove enzyme from bibliographyGenerator -> https://github.com/inspirehep/inspirehep/tree/master/ui/src/bibliographyGenerator
• Update the tests so as to use RTL and jest

Acceptance criteria

• The tests work as before and no regression is introduced
• No use of enzyme in the bibliographyGenerator collection

Bonus points

• If possible, try adding extra more efficient tests than snapshots whenever we are refactoring snapshot tests.
