[Feature request] Support for document type

Have AI assign the document type.

Describe the solution you'd like
Two options:

1. Based on the document type already setup, the AI assigns one of the options.
2. The AI freely determines the document type and assigns an existing or creates a new one.

When using the option where AI has to pick from an existing list, it could be beneficial to have the option to describe how to match each of these types.

By document type you mean something like [contract,bill, ....] or something like [pdf,txt,docx,xls...] ?

I have always used this to identify what type of document (Invoice, statement, contract etc). Independent of the values, it would be using the Document Types function.

I would also be happy to see document types.

I do also rely on document types, it would be nice to have this set automatically.
Also, I propose to add a checkbox to effectively allow paperless-ai to use only existing document types OR allow it to create new ones (if none of the existing ones do fit)
