[Feature Request] Disable selected features

I would love to be able to have some of the features disabled. As of right now i would like to stick with having paperless tag my documents and add a correspondet without any AI-Input. I do however love the functionality to have paperless-ai generate a title. And maybe a description in the future (?).

The option to switch tags and correspondents on or off is very important to me. I would be very happy if you could add this :)

I'd like for the ability to select the action to take for each part of the document, like title, tags, etc.
For each one, have "no action", "generate if missing", "generate always".
