[feature request] add more then one AI Endpoint

Low prio request, but since you are redesigning the app I wanted to propose the ID to restructure the AI Endpoint Entry:

Instead of the current fields (dropdown+apikey+misc data) it would be nice to have a "Database" (or List/Table)
Then there would be a button to add a new AI Endpoint which then asks for the API data (simliar to how it is right now) and finally a save button which would add one line into the table. From there the user could rearrange them in terms of priority. (e.g. use local first if available, if not use openAI).

Thinking this further each entry could have:

• the option to use the default prompt or it's own prompt specific to the model
• active/inactive state
• a toggle to attach the actual document file to the api request instead of just the OCR Text from the database
