This was canceled actually, since doing a "Reset Kubernetes cluster" from the Docker Desktop ui (which is necessary sometimes) would cause this storage to be lost, which is not what we want.

Will keep this issue open for now, as a tracker of my simply setting up MinIO on my host machine manually. (that and, adding some instructions for this to the readme)
