Normalize icon for CDT Cloud extensions

The peripheral inspector seems to have a different icon to memory inspector. I think the memory inspector one is correct, so I am filing this issue against peripheral inspector. Feel free to move it to the correct repo.

We had already updated the icon on the repo a while ago (https://github.com/eclipse-cdt-cloud/vscode-peripheral-inspector/blob/main/media/cdtcloud.png). But didn't make a release since. We are in the middle of some major GUI framework changes (already on main). But should be in a position soon to make a new release with the updated icon.
