I think this is a great idea and would really take advantage of the low-power nature of e-ink displays as well. That said, it’s a significant change and I likely won’t have time to work on it anytime soon—but contributions are always welcome! Some initial thoughts:

I love the project! When I get more time (currently renovating my home) i'd like to contribute.
I have an idea, how about the idea of running InkyPi in a centralised place on your local network (in a docker container maybe), and then outputting to ESP32 devices that could be battery powered.
I've seen projects where the ESP32 can be battery powered with E-Ink display and the battery literally lasts months.
Maybe InkyPi could stage the images for each ESP32-based device, then they collect the next time they wake up (the less frequent they wake-up the longer the battery lasts).
