Question regarding ICE

Hi there - I'm just wondering in what situations you would need to configure ICE servers?
Since we now are really server<>client model surely there are no worries about NAT anymore?

Certainly so far in my testing there seem to have been no problems leaving the ice server property as the default blank array.
