Provide Documentation

We need to document all necessary steps to go from https://github.com/vgteam/odgi over https://github.com/graph-genome/component_segmentation to https://github.com/graph-genome/Schematize/ and visualize the pangenome.
In each repository, we should document:

• Input
• What is happening?
• Output

An overview and starting point for potential users could be our https://github.com/graph-genome/pipeline.
And people should be aware of our JBrowse2 plugin https://github.com/graph-genome/jbrowse-components.

Cool that you already updated your pipeline! This will be our core one-stop-shop @6br :)
I am aware of your PR, but I did not find the time to review, yet....
