trixie probably defaults to dhcpcd, instead of isc-dhcp-client.

In grml-live this was preemptively addressed in grml/grml-live@e530f07

It's a bit annoying as in grml-debootstrap we have no support for classes or anything.

Exactly, also related #76 (and my wish for redesigning things in grml-debootstrap overall) :-/
