As someone with no experience with LATEX (or IVOATEX) I found https://github.com/ivoa/ivoatex-docker very useful. I had to install some missing dependencies to the image (which I proposed in a subsequent PR) but the rest of the environment was there already ready and worked with the existing publishing procedure. I suggest mentioning this in the documentation so others in a similar situation can take advantage of it.
