- 1 chicken carcass
- some leftover chicken breast
- 1 leek, cut in 1cm slices
- 2 potatoes cut in big dice
- 1 carrot cut in 1cm slices
- 2 turnips cut in big dice
- 30 gr of ginger, sliced
- 1 bunch of coriander
- 1 stick of lemongrass
- 1.5L water
- 3/4 tablespoon salt
- 1 pinch of pepper
- Put aside half of the coriander, mix all the other ingredients into a pot.
- Bring to a boil, then cook covered for 30 min.
- Take the carcass out, remove all bits of meat and put them back into the soup.
- Serve with the rest of the coriander.
