Create a video of this in action

I'm considering an e-ink monitor, and also looking at potentially getting a remarkable to use for that purpose. But since this isn't officially supported, I don't know how well it works. Would it be possible for someone to create a video showing this setup in action?

Something like this video: https://www.youtube.com/watch?v=v8YkE4tXMIc ; ie to demonstrate the latency, and whether it would be feasible for things like programming and reading. I think this would also generally be useful for folks in a similar position, or who are simply wondering if they should install this setup.
