As discussed today, everything we prototype on the simple SIR model should also be done for a bigger, more complex model. My suggestion is to take the model and data from https://github.com/charlesm93/disease_transmission_workflow

We'd need to modernise the Stan code and then test our stuff. But should be doable.

@fccoelho , what do you think?
