I set a similiar Option I also do on my NixOS machines for zsh

programs.bash.shellAliases = {
  cat = "${pkgs.bat}/bin/bat -p";
};

But I do not get bats Syntax Highlights and the command which is not available to verify if I am still using core utils cat

I think batpipe should already take care of this I have programs.bat.extraPackages = [ pkgs.batpipe ];

The package is called pkgs.bat-extras.batpipe
But it did not work
