Will there be a :ui prop for strategy:‘override’ as in version 2?

No this hasn't been and will not be implemented in Nuxt UI v3. However, once this PR #2938 is merged you will be able to disable tailwind-merge entirely.

Is there a way to remove a class?

If I want to remove ms-2, do I have to write ms-[unset], or is there a remove:ms-2 thing :)

No you have to override it this way or write ms-0.
