After installing, Jekyll's HTML output will be minified by default. If you configure env in your Jekyll configuration, HTML will be minified only when env is set to production.
env: production
It should explain how to configure env in Jekyll configuration, as it is an undocumented feature of Jekyll (as demonstrated by the lack of useful information turned up by internet searches).
The README implies that one should put env: production at the top level of _config.yml. But, unsurprisingly, this has no effect.
The README should be expanded to include enough information to enable someone to use all of its documented features.

Also, you say "You can set configuration options for HtmlPress in your Jekyll configuration like this", but I could not find options specs neither on this repo, nor on HtmlPress repo.
