I have an old note suggesting that nix-buffer won't work via TRAMP, should confirm this and either fix it or at least signpost it well.

It does not, AFAICT. I've confirmed nix-build is available on the path on the remote host, but when running M-x nix-buffer I still get

nix-buffer--nix-build: Searching for program: No such file or directory, nix-build

which would indicate to me that emacs is trying to run the program on my local machine.

I'm not sure if make-process is expected to work remotely, I still know ~0 about elisp :/
