Consider removing /triton/alpha/list-models utility endpoint

Extra route seems to be there for convenience, but might not be necessary. I'd rather remove it for now if we don't have a strong reason to need it right now, see: #123 (comment)

Done criteria:

• Identify how this endpoint is currently used
• Confirm whether the endpoint is necessary or not
• Remove endpoint if not required
• Add test for endpoint if it is required
