update documentation images and remove old material #1027

The documentation source files were not updated completely with the last release of Neo. This PR contains updated versions of most of the images. The auto-generated class diagram will be updated via #1026. This PR does not include updates of the documentation text.

Hi Julia.
OpenElectrophy and SpykeView are dead project.
I would not put then on the neo_ecosystem diagram.
But you should add "ephyviewer" which is well maintened.
