docs/release-process: fix instructions to update dependencies

Due to the recent changes on podvm dockerfiles and makefiles to allow
building from local sources, the instructions to update kata containers
and other dependencies on the release process document had to be
updated. We no longer pass the KATA_SRC_BRANCH (or KATA_SRC_REF) to the
dockerfiles, instead they are read from the versions.yaml.
