Lots of updates here:

  1. General vendor updates
  2. confluent-kafka v2 and move to Poll() instead of Events()
  3. fix makefile to consistently use docker (instead of a mishmash)
  4. Go 1.20
  5. Better ctrl-c/interrupt handling
  6. Clean up the example config file so it is actually valid yaml

I'm not in a spot to test this fully, but it should work?
