Monthly Update of Modules and Clean Up

This month was more of a code update and clean up 🧼 but is always needed. The following modules were updated:

• ts-jest
• @types/node
• cheerio
• fs-extra
• luxon and @types/luxon
• codecov
• @types/jest

In addition we removed some code and config that is no longer used. 🎉
