chore: add lambda calculus test

Description

Problem*

This is a next step after the regular expression test

I found:

• chore: add regression tests for PR #7570 from lambda interpreter test #7638
• Unreachable enum match warning for reachable match #7637
• Unclear error when calling BoundedVec::new() that only occurs during execution #7617

TODO:

• split out remaining cases into unconstrained/constrained versions
• speed up test with unconstrained function
